SUNDAY BREAKFAST, BANANA SOFT SERVE WITH MANGO

We all know breakfast is the most important meal of the day. It’s a way to start your morning right and it gives you enough energy for the rest of the day. Back in the days I always skipped breakfast and I couldn’t get any food through my troat before 9AM. But thanks to my work-out regime I never skip my breakfast – even on super busy weekdays. But weekends are made for making a bit more effort of your breakfast and that’s why I like to share some delicious (and most of the time healthy) breakfast recipes more often.

Because Summer has officially started today I’m sharing a yummy recipe that’s perfect on hotter days and when you’re looking for a freezing cold breakfast. We all love ice cream, right? So for today it’s time to make Banana Soft serve with some Baked Mango and chopped nuts. I guarantee you, this recipe is almost not a recipe because it’s super-duper-easy.

RECIPE : BANANA SOFT SERVE WITH BAKED MANGO

What do you need
Bananas (2 to 3)
Blender (which can chop ice cubes)
Mango
Granola or some nuts
Milk (Soja or Almond)

Recipe
First, collect ripe bananas and chopped them in smaller pieces and put them in a plastic bag and put it directly into the freezer. I think the bananas are already ready after a few hours but I always put them in the freezer the night before I want to make this breakfast. Get the freezed banana chops out of the freezer and put them in your blender with a bit of (soja or almond) milk. The result is a ice-cream texture banana mix. During or just before making the banana soft serve I chop some mango and bake them in a hot pan with coconut oil. Of course you can choose fanother kind of food – but I like the mix of the cold soft serve and the warm mango. Finish it all up with some nuts or granola for a healthy and yummy breakfast
