MONDAY BREAKFAST, OMELETTE A LA NEW YORK

Yes! In my latest post I already talked a bit about re-creating delicious food and drinks I’ve tasted during my trips. For this (manic) Monday I created a delicious omelette I had at one of those typical American diners and during my stay in New York I had this breakfast it not once, but twice because it was so-so delicious. It’s so good you even can have it for lunch or even for dinner with a salad on the side.

This omelette is filled with some yummy greens aka broccoli and of course t’s topped off with some cheese (like almost everything in the USA). It’s also the perfect way to get your proteins (eggs), good carbs (broccoli) while working out – and of course it’s up to you if you want to include the cheese! So let me tell you how to make this yummy-ness!

You need:
2 to 3 eggs
milk (normal, soja or almond)
handful of broccoli
salt and pepper
few pieces of cheese
coconut oil

How to make it?
Bring a bit of water to a boil in a large pan and drop in chopped broccoli and cook just until soft and bright green. Drain and place the broccoli in a small bowl and let it cool off. Blend the eggs, salt and pepper briskly with a fork in a medium bowl. Heat coconut oil on medium high heat until it’s hot. Pour in the egg mixture and wait 2-3 minutes, then sprinkle broccoli cheese mixture over the omelet. Continue to cook until almost set and the bottom is golden. This should take about 1 minute. Now it’s time to fold the omelette with a spatula. Ready it your breakfast (lunch or dinner)!
